The grapes are picked by hand, harvested at the optimum maturity, then directly pressed, and the juice falls in an underground tank by gravity. It is protected by CO2 instead of sulfites to make sure the native yeast can make the fermentation happen. Only when the fermentation is finished is a small addition of sulfites to ensure no malolactic fermentation occurs.  It also protects the flavors of the wine. After 14 months of lees aging and waiting for a year before release, it is ready to drink. This Muscadet is truly a minimal intervention wine; full and concentrated, delicious and rich with the combination of mineral, apple and citrus aromas and flavours. This wine is enjoyable now but made to age. Aging potential is 10 to 15 years -rare for a muscadet.
