Domaine Jean Dauvissat Pére et Fils

The Domaine was founded in 1955 in the tiny village of Milly, just outside of "downtown" Chablis, by Jean Dauvissat. Fabien Dauvissat, the grandson of Jean and the current owner and winemaker for the Domaine, took over for his father in 2009, who was selling wine in bulk at the time. He overhauled the farming from conventional to organic and rebuilt the reputation of the winery. Today, the Domaine owns 22 HA in Chablis, over seven communes and 53 different parcels. The vines and parcels represent a comprehensive reflection of the appellation.

Organic/Biologique & Minimal intervention. 40-year-old vines. Natural yeast fermentation. Released after 18 months ageing is stainless steel and 600L Demi Muit.
